Connecticut comfort

Celebrate Lamont's victory with some comfort food!

Ladies Home Journal Meatloaf I (From the 1960 1st edition of the cookbook). This is the recipe I use.

  • 1 pound ground beef
  • 1 egg
  • 1/2 cup chili sauce
  • 1 tsp. Worcestershire sauce
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 13 (!) crushed saltine crackers
  • 1 chopped onion
  • 3-4 slices bacon (optional)
  • Ketchup

Mix together the ground beef, egg, chili sauce, Worcestershire sauce, salt, pepper, 10 crushed crackers, and the onion.

Grease a meatloaf pan (I put foil in first, then spray with PAM or its equivalent). Pack the meat mixture into it. Take the remaining crackers, crush them, and sprinkle over the top. Add the bacon strips if desired. Spread ketchup evenly over the top. Bake @ 350 degrees for an hour. Serve with baked potato and a green veggie.

sprinkling the saltine cracker crumbs on top of the meat loaf iss ingenious. I had sloppy joe's myself last night....sans the saltine crackers. Now you tell me.

I've been known to use Fritos or Doritos as a substitute for the saltines. ;)

This comes high on my list of winter comfort foods. My mom made meatloaf like this. And we always had baked potato with it and green beans. Always. Yum. I wouldn't be at all surprised if she found her recipe in the Ladies Home Journal, to which she faithfully subscribed for many years.

And of course, if you were a Lieberman supporter, substitute ground crow for the beef.
