When my cousin and her family were here a couple of weeks ago they made a Tri-Tip Roast and fabricated a Santa Maria Rub out of salt, pepper, garlic salt and oregano. I expressed my liking for it, and day before yesterday a bottle of this appeared in our mailbox. So I immediately put it to use.
Wow! I can almost smell it grilling from here.
Now I really do have to stop chores and get lunch! :-)

We have used this at a couple parties and whipped through a half-dozen racks of ribs this way. No overnight marination, extremely easy preparation, and results people still talk about.

I honestly couldn't tell too much difference. I think I need to rub the seasoning in earlier and let it set for a while.
